Fairtrade Fortnight 28 February – 13 March

Sunday 5 March – Traidcraft Stall – Honey and Wine Tasting

For Fairtrade Fortnight this year Traidcraft are focussing on HONEY.  As anyone who has bought from our stall will know they do make EXCEEDINGLY GOOD HONEY.  But there’s more to Apico-op’s honey than the taste. 

•    Traidcraft pay a fair price so the workers and their families benefit. 
•    Traidcraft use the premium [that little bit extra you pay over shop prices] to help the communities the bee keepers live in – in all sorts of ways. 
It may not have anything to do with bees but providing decent lavatories for their children’s schools, providing lights so that students can study at home after dark, makes a difference to people’s lives.         

Traidcraft also helped out when hives in Chile were wrecked by an earthquake.   That’s where your premium goes. 

Why not buy some Traidcraft honey and try some of these recipes?
   
Honey glazed vegetables
50g/2oz butter
1 tbsp sesame seeds
1 tbsp chopped fresh thyme or 1 tsp of dried
2 carrots chopped and blanched
1 leek, sliced and blanched
250g/9oz green beans, trimmed and blanched
salt and freshly ground black pepper
100ml/3½fl oz Fairtrade honey
1 tsp balsamic vinegar
Method
Heat the butter in a pan then add the sesame seeds, thyme and vegetables. Stir well and season with salt and freshly ground black pepper.
Add the honey and bring to the boil. Reduce the heat and simmer, stirring occasionally, until all the vegetables are coated and the honey has thickened.

Fruity flapjacks
2 tbsp golden syrup
4 tbsp Fairtrade honey
150g/5oz butter
150g/5oz porridge oats
100g/3½oz desiccated coconut
75g/2¾oz Fairtrade sultanas
75g/2¾oz dried Fairtrade mango, chopped

Method
Preheat the oven to 180C/350F/Gas 4.
Grease a medium-sized deep baking tray. Approx 7” x 9”.
In a large saucepan, melt the golden syrup, honey and butter together over a low heat, stirring to mix.
Remove the pan from the heat and stir in the oats, coconut, raisins and mango.
Pour the flapjack mixture into the tray and press it down gently.
Bake for 25-30 minutes, or until deep golden-brown on top.
Score the flapjack into pieces whilst still hot.
Allow to cool in the tin before turning out.

Spiced nuts
1 tbsp vegetable oil
100g/3oz Fairtrade nuts, such as cahews, almonds, Brazils, walnuts.
pinch paprika
½ tsp tumeric
½ tsp chilli flakes
1 tbsp Fairtrade honey

Method
Heat the oil in a frying pan. Add all the ingredients and cook for 3-5 minutes, stirring frequently until the nuts are beginning to brown.
Transfer to a bowl to serve.

Fair trade wine tasting
Traidcraft also do wine which we don’t have a licence to sell on our stall – you can order it yourself from their website,  or have you tried the Fairtrade wines available in shops?   We will have a selection of these for tasting on 5th March in the Crypt.   These wines, from such shops as Waitrose, Sainsburys, the Co-op,  are competitively priced and you can be sure that if they carry the Fairtrade label the growers are getting a fair price for their fruit.
